The 2021 vintage of the Cava Àtica Extra Brut Gran Reserva is made from a blend of Macabeo, Xarel·lo, Chardonnay and Parellada.
The plants grow in clayey-limestone soils near the Mediterranean sea, at an altitude of 350 metres above sea level. The winery has completed its conversion to organic farming.
Produced following the traditional Cava method, this Spanish sparkling wine of the Parató Vinícola winery was first fermented for a period of 16 days under controlled temperature.
After that, the Cava Àtica Extra Brut Gran Reserva 2021 completed secondary fermentation inside the bottle, and was aged for a minimum of 30 months on its lees.
This organic Cava Gran Reserva from Penedès is perfect to drink throughout a whole meal.
This is a vegan certified Cava.

Nose | This blend of Macabeo, Xarel·lo, Chardonnay and Parellada shows sophisticated notes of pastry, fine lees, toasted bread and raw almonds. As it opens, aromas of ripe white fruit, dried apricots and withered flowers come to the fore. |
Palate | Fresh and crisp, this Cava of Parató Vinícola has some tiny bubbles and a creamy, suave body. Orange rind, garrigue, sweet spices, some buttery remembrances and dim mineral notions. Medium finish. |
