White Wine Cabaler 2021

The only Spanish white wine produced by Celler Cesca Vicent, Cabaler is made from a typical DOQ Priorat blend of White Grenache and Macabeo.
The grapes come from certified organic vineyards planted in steep slopes with slate and rocky soils in the Mas d'en Corral vineyard, in the village of Gratallops.
Harvested by hand in late August, a few days before they were fully ripe, the two varieties were vinified together. Destemmed and lightly crushed, the grapes were first macerated with the skins, after which they began to ferment in stainless steel tanks.
After that, two-thirds of Cabaler 2021 was transferred into oak and chestnut oak barrels, where they completed alcoholic fermentation, with a couple of lees stirrings performed on a daily basis. The rest wine completed the same process in the stainless steel tanks. The wine was gently filtered before bottling.
Aerate this Priorat white wine some time before drinking.
Within the Priorat five-tier wine classification system, this white wine belongs to the Vi de Paratge category, a designation specific to Priorat that sits between the Village Wine and the Premier Cru levels.

Our personal opinion | Hard to get because of its quality and limited production, Cabaler 2021 is an enticing Priorat white wine. |
