The Cava Caelus Gran Reserva Pinot Noir is the new top-shelf Spanish sparkling wine of the U Més U Fan Tres winery, and up-and-coming winery from Penedès.
Made from Pinot Noir vinified with the Blanc de Noirs technique, it is sourced from vines planted in 2006 near Sant Martí Surroca, a village at 400 metres of altitude in DO Penedès. The vineyard is classified by the DO Cava as "Viñedo de Guarda Superior”, meaning that all its grapes must be used to produce Gran Reserva Cavas.
Produced following the traditional method, the grapes were hand-harvested and selected on site and on entering the winemaking facility. Gently pressed to avoid the contact of the must and the skins, this Blanc de Noirs was fermented in stainless steel tanks.
After being bottled, the cava Caelus Gran Reserva Pinot Noir 2016 completed secondary fermentation and was aged for 60 months minimum in the cellar.
Finally, this cava Gran Reserva Brut Nature was disgorged and added no shipping liquor. The result is a Pinot Noir sparkler of great finesse and purity.

Nose | This varietal Blanc de Noirs cava is endearingly complex, with a bright core of forest berries, underscored by notes of yeast autolysis, custard, citrus and dry fruit, with a dash of herbs and flowers. |
Palate | Fresh and nuanced, with a keen acidity, delicate bubbles and lush texture, the cava Caelus of bdoega U Més U has a subtle minerality and a nice tension to the berryish fruit. Delicate floral and garrigue notes on the finish, adding complexity. |
