Casa de la Ermita Dulce Monastrell from the Casa de la Ermita winery is a Spanish dessert red wine that has been crafted without additives, added alcohols, or added sugars. The Monastrell grapes from Jumilla, Spain, that were used in this wine were intentionally harvested slightly over ripe, but while still in good health. These grapes were then left out under the sun in order to create a higher concentration of natural sugars from the grapes. After this process is completed, the Monastrell grapes are brought to the winery where they are very delicately pressed and dehydrated. Casa de la Ermita then adds resistant yeasts to secure even higher levels of natural sugar production by the grapes before fermentation. In the fermentation process, when the temperature reaches 58 ºF (14.5 ªC) the temperature is then brought down to stop the fermentation. This Spanish dessert wine Casa de la Ermita Dulce Monastrell is then aged for three months in oak barrels before it is bottled.

The aftertaste of this wine is long and sweet without being excessive. There is a grand harmony between sweet ripe fruits and fruit jams. |
