This is the new vintage of the red wine Cérvoles Negre, entirely sourced from Vinyes Altes de Les Garrigues, a estate located the Pre-Pyrenees area of Catalonia, in DO Costers del Segre.
A blend of Ull de Lebre (Tempranillo), Grenache and Cabernet Sauvignon, the vineyards are 30 years old on average. They are grown in sandy-clay soils with an abundance of gravel on the surface, at an altitude around 700 metres above sea level, with huge temperature differences between daytime and nighttime.
It is worth mentioning that the Cérvoles Celler winery, the producer of this Spanish red wine, is a member of the association of high-quality wine producers Grandes Pagos de España since 2002.
Harvested by hand, each variety was destemmed and separately vinified in steel tanks. After that, the Grenache wine was transferred into a 4,000-litre French oak vat, and the Cab. Sauvignon and Ull de Llebre wines went into 225-litre oak barrels. The three were aged for 12 months, after which the red wine Cérvoles 2021 was blended, bottled and aged for 6 months minimum before being released onto the market.

Nose | Remarkably complex, this blend of Ull de Llebre, Cabernet Sauvignon and Grenache begins with aromas of cassis, plums and blackcurrants that slowly evolve into remembrances of clove, cardamom, cocoa and cinnamon, combined with notes of menthol, withered leaves, wet tobacco and some intense mineral overtones. |
Palate | This remarkable wine from Cérvoles Celler has a smooth texture and a substantial volume. Liquorice, underbush, wild berries, black truffles, vegetables, spices and balsam. Tense acidity, ripe tannins and very long finish with remembrances of amarena cherries, menthol and toast. There are plenty of things to discover here. |
