Coming from DO Cigales, a region known primarily for its rosé wines, the wine César Príncipe is a varietal Tempranillo wine produced from old vineyards 70 to 100 years old
This is the flagship Spanish red wine of bodega César Príncipe, named after the father of the current owner, Ignacio Príncipe.
The grapes were sourced from the four best parcels of the winery, situated in Fuensaldaña, Valladolid.
Hand-harvested and destemmed, the grapes were cold-macerated and then fermented in stainless steel tanks at a temperature between 28ºC and 30ºC for approximately 7 days. Then this red wine from Cigales was macerated with the skins for 3 weeks before undergoing malolactic fermentation, which was carried out both in tanks and in oak barrels.
After that, the wine César Príncipe 2020 was aged for 14 months in 90% French oak barrels and 10% American oak barrels.
Decant this red wine from Valladolid at least 40 minutes before drinking.
