Coming from DO Utiel-Requena, Valencia, Cueva Tinto is a totally indigenous and charmingly geeky low-sulfite red wine produced by Bodegas Cueva, one of most respected natural wine producers in Spain.
The charismatic Mariano of Bodegas Cueva crafted this Spanish red wine basically from the native variety Bobal, which he blended with a 10% Tempranillo. The grapes are sourced from vineyards with sandy-limestone soils grown at 650-700 metres of altitude.
Hand-picked and fully destemmed, the grape bunches were macerated with the skins for 15 days with a single pump-over. Alcoholic fermentation was carried out in stainless steel tanks with indigenous yeasts in a carbonic environment. After that, this red wine from Utiel-Requena was kept for 7 months on lees in the diposits.
Finally, the red wine Cueva Tinto 2020 was bottled unfined and unfiltered, hence it is advisable to decant it.
An excellent way to get a taste of this wine producing style, this no sulphites added wine will pair excellently with meat recipes, cold cuts and mediuma aged cheeses.

Nose | This blend of Bobal and Tempranillo opens tight, but after some aeration it really starts delivering, with aromas of ripe cherries and sour berries, some earthy and floral notes and a suggestion of bitter herbs. |
Palate | Very well crafted, this wine of Bodegas Cueva is fruit-forward and full of life, with a fizzy feel and an exhilarating mid palate. Berryish and gently herbal, with a note of violets and a medium-long earthy finish. |
