This is the new vintage of the wine Davila M-100, produced by Adegas Valmiñor in the DO Rías Baixas.
This remarkable Spanish white wine is a blend of Loureiro, Caíño Blanco and Albariño, the grapes were sourced from vineyards with different soil compositions and sun orientations.
Picked by hand and selected twice, the grapes were fully destemmed. Then each variety was separately vinified. The Albariño was first cold-macerated, and then it was fermented and aged on its lees for 3 months in French oak barrels. Once the process was completed, the Albariño wine was blended with the Caíño Blanco and the Loureiro wines, which had fermented in stainless steel tanks.
The final blend of the wine Davila M-100 2018 was then aged in stainless steel tanks for 3 months. Finally, it was bottled and aged for a minimum of 6 months before it hit the market.
This is a serious, terroir-driven white wine from Rías Baixas.
Pair with white meat recipes, creamy cheese, and fish dishes.

Nose | This blend of Loureira, Caíño Blanco and Albariño is nuanced and information-rich. Passion fruit, quince jelly and papaya, with hints of aromatic herbs, lemon rind and mandarine, and notes of dry fruit and smoke. |
Palate | This white wine of Adegas Valmiñor is supple and intricate, with excellent definition and a steely core of acidity. Deeply mineral, with a saline and citrusy note and some bitter remembrances. Finish is very long, leaving an aftertaste of herbs and tropical fruit. There is plenty to enjoy here. |
