The oldest of all the Finos produced by bodega Alvear, Alvear Fino Capataz is an interesting Spanish fortified wine.
Instead of being produced from Palomino, which is usually the case, this Fino is a varietal Pedro Ximénez, the most representative variety of DO Montilla-Moriles.
Produced following the soleras and criaderas system, this Fino from Montilla-Moriles was aged for 12 years minimum under the "flor" veil.
This fortified wine hence lies halfway between an aged Fino and a young Amontillado. It is a truly unique fortified wine from Montilla-Moriles.
Pair this dry fortified wine with oysters, tempura vegetables or clam soup. You can also enjoy it throughout a multi course meal.
