Red Wine Ébano Salvaje 2019

This is the new vintage of the wine Ébano Salvaje, a wine produced by the Ébano Viñedos y Bodegas winery.
A varietal Tempranillo, this Spanish red wine is made from the oldest estate vines, located in the heart of Ribera del Duero. They are perched at an altitud over 800 metres, and have very low yields.
The harvest took place at the end of October. Maceration and alcoholic fermentation of this Crianza red wine was carried out in stainless steel tanks, with a 70% of the grapes undestemmed.
After that, the red wine Ébano Salvaje 2019 was transferred into French oak barrels, where it completed malolactic fermentation and was aged for 14 months.
Finally, before its commercial release this red wine from Ribera del Duero was aged for a minimum of 12 months in the bottle.

Nose | This varietal Tempranillo is complex and rich. Remembrances of forest floor and earth, alongside some mineral undertones, evolving into aromas of mulberries and blackberries, with dim remembrances of spices, menthol and toast. |
Palate | Meaty and palate-coating, this wine from Ébano Viñedos y Bodegas has a good acidity and some slightly rugged tannins, features that indicate substantial potential for growth. Toast, fruit and spices are nicely balanced, though the integration is not yet complete. Long finish with a complex aftertaste of mineral, black fruit and underbrush. |
Our personal opinion | True to its name, the wine Ébano Salvaje 2019 is still a bit wild right now. However, it shows great promise. Pair this Ribera del Duero with hearty meat dishes. |
