The Mas Sersal winery presents a very interesting rarity: the vermouth Estones Vermut PX, the only vermouth from Catalonia made solely from Pedro Ximénez.

Native to the south of Spain, in Catalonia the Pedro Ximénez variety is only found in small plots located in the Priorat and Terra Alta wine regions.

After a meticulous vinification, the base wine was aged on lees for 12 months and then this Spanish white vermouth went through an oxidative ageing process using the sol i serena method (leaving the wine outdoors) for another 12 months. Then this white vermouth from Terra Alta was macerated with a selection of botanicals before being added wine alcohol up to 18% ABV and sweetened with sugar and caramel (80 grams per litre).

Deep amber, the vermouth Estones Vermut PX has a complex and richly layered nose, displaying sherryish remembrances, sweet spices, candied citrus and bitter herbs, with mineral and balsamic undertones. On the palate, this Pedro Ximénez vermouth is vinous, mildly sweet and surprisingly fresh - considering the alcohol content - with some bitter notes, a charming oxidative suggestion and a very long and complex finish.
