Made by the Fabio Coullet winery, the white wine Fabio Coullet Secuencial is a snapshot of the Málaga wine region, a little-known area that, according to some senior wine critics, has all that is required to become the next Priorat or the new Sierra de Gredos.
This blended Spanish white wine is made from local varieties grown in slate, clay and calcite soils at 300 to 1,000 metres of altitude. The composition is 60% Muscat of Alexandria from La Axarquía, 20% Pedro Ximénez from the Málaga mountains and 20% Doradilla from Tierras de Mollina. The vines are 25 to 50 years of age.
Hand-picked from August til mid September, the grapes were destemmed and the Doradilla variety was macerated for 24 hours. Then this white wine from Málaga was fermented with native yeasts for 15 days in stainless steel tanks. After that, the white wine Fabio Coullet Secuencial 2021 was kept for 4 months in the tanks with no lees-stirrings. It was gently filtered before bottling.
