A varietal Albariño from DO Rías Baixas, the white wine Fillaboa Selección Monte Alto is sourced exclusively from a 7-hectare vineyard composed of sandy soils peppered with pebblestones, located near the mouth of the Miño river, at 150 metres of altitude.
The 35-year-old vines were hand harvested, destemmed and gently crushed. Then the free-run must of this Spanish white wine was fermented in stainless steel tanks with selected yeasts.
After that, this white wine from Rías Baixas was aged on its lees for 24 months with periodic stirrings.
Finally, the white wine Fillaboa Selección Monte Alto 2021 was gently fined and stabilized before bottling.
The production of this white wine aged on lees is around 14,000 bottles.
