A young winery to keep an eye on, Cava Gatell is the producer of Gatell Heritage Brut Nature Gran Reserva.
This blended Spanish sparkling wine is made from the traditional Cava triad, Macabeo, Xarel·lo and Parellada, plus a dollop of Chardonnay. The grapes are sourced from vineyards in conversion to organic agriculture.
Vinification went as follows. First, each variety was separately fermented and aged for some months in French oak barrels. After that, the four base wines were blended and the resulting wine went back into the barrels, where it was aged for around 3 months.
After that, the cava Gatell Heritage Brut Nature Gran Reserva 2016 was bottled and went through secondary fermentation.
Finally, this cava brut nature was aged for 40 months before being disgorged with no sugar added.
This cava gran reserva will make a nice pairing with a multi-course dinner.
