Produced by Cava Gatell, an up-and-coming boutique winery from Penedès, the Cava Gatell Initial Brut Nature Gran Reserva is a very interesting Spanish sparkling wine.
This is for two reasons. First, here the traditional Cava blend of Macabeo, Xarel·lo and Parellada is complemented with a small amount of Malvasia, a variety seldom used for producing Cava.
Second, the four varieties went through a non-conventional vinification. First, each variety was separately fermented in French oak barrels. After that, this cava brut nature was blended and aged in the barrels for some months.
Then the Cava Gatell Initial Brut Nature Gran Reserva 2017 was bottled. After completing secondary fermentation, it was aged for 60 months minimum before being disgorged with no suggar added.
This is a versatile cava gran reserva. Drink without food, or enjoy through a multi-course meal.
