Coming from La Rioja, the wine Luis Cañas Tinto Maceración Carbónica, previously known as Luis Cañas Tinto Joven, is made with the carbonic maceration technique, a process also used in the French region of Beaujolais.
The destemmed bunches of Tempranillo grapes were fermented uncrushed in a carbon dioxide rich environment, so that the juice ferments while it is still inside the grape. The weight of the upper grapes naturally crushed those at the bottom, which naturally kickstarted the alcoholic fermentation of this young Spanish red wine.
After 12 days, the process continues with frequent pump-overs to fix the colour of this vegan wine. Before being bottled, the wine Luis Cañas Tinto Maceración Carbónica 2023 of the Luis Cañas winery was gently filtered and clarified.
