The Cava Mar de Marta is a fascinating Spanish sparkling wine that went through two ageing processes: one on the ground and one underwater.
Made by bodega Ramon Canals, this Gran Reserva Cava is made from the traditional DO Cava varieties: Macabeo, Xarel·lo and Parellada, sourced from certified organic vineyards.
The grapes were vinified in stainless steel tanks. Then this organic Cava from Penedès was blended and bottled before going through secondary fermentation, after which it was kept for 36 months in the cellar.
Then the Cava Mar de Marta was aged underwater for a period of 7 months. The effects of underwater ageing – derived from the micro-oscillation caused by marine currents, as well as from water pressure and temperature – give this Cava from Penedès a decidedly original character.
It is worth mentioning that, as a result of the underwater ageing process, every bottle of this Cava from Penedès is covered with natural marine incrustations, as if it were a salvaged sunken treasure.
We suggest opening the bottle some minutes before drinking.

Nose | This blend of Macabeo, Xarel·lo and Parellada is complex, subtle and expressive. Ripe white fruit with a dash of bone fruit and citrus, fine lees and spices, underscored by a dash of aromatic herbs, a saline note with a floral twist. |
Palate | Creamy, layered and fresh, with small, nicely integrated bubbles, stupendous freshness and remarkable definition and balance. This Cava of the Ramon Canals winery has a distinctive saline and balsamic edge to the white fruit, with a long and elegant finish. |
