Produced in DO Rueda, a region with a Continental climate, the wine Palomo Cojo is a varietal Verdejo made from vines grown in poor soils.
After the harvest, the grapes were destemmed and macerated for 10 hours to extract colour and aromas. After a gentle pressing, this Spanish white wine was fermented under controlled temperature.
Purposefully, the wine Palomo Cojo 2023 was not further aged in oak to preserve its delicately mineral character.
Pair this young white wine with light dishes and finger food.
