White Wine Principia Mathematica 2023

Back in 2010, the first vintage of the wine Principia Mathematica was conceived by Irene Alemany and Laurent Corrió, owners of bodega Alemany i Corrió, with the aim of inspiring a paradigm shift in the white wines produced in Penedés.
More than a decade later, it can be argued that their ambition has been fulfilled, since an ever-growing number of winegrowers in Penedès are producing terroir-oriented Spanish white wines based solely on local varieties.
A varietal Xarel·lo, the grapes are sourced from over 30-year-old vineyards located in Sant Pere de Molanta, in the Garraf mountain range. The vines grow in limestone soils with an abundance of mineral fossils.
Produced following the guidelines of a Burgundian Chardonnay, two thirds of the wine Principia Mathematica 2023 were fermented and aged for 6 months in new, 600 and 700-litre French oak barrels with periodic lees-stirrings. The remaining third of the wine was vinified in stainless steel tanks and also aged for 6 months on its lees.
Complex, age-worthy and distinctively mineral, this white wine from Penedès will make an excellent pairing with oily fish recipes, semi-hard cheeses and white meat dishes.
