Showing a redesigned brand image, the U Més U winery presents Rara Avis Larus Brut Nature Reserva, a part of a new collection of small-production sparklers named Rara Avis.
Produced following the traditional Cava method, this Spanish sparkling wine is made from 50% Pinot Noir, vinified as a Blanc de Noirs, and 50% Xarel·lo, both sourced from estate-owned, organically farmed vineyards situated at 350 metres of altitude, in the Alt Penedès area.
Hand-harvested and selected on site, each variety was separately vinified. Specificallly, the Pinot Noir must was avoided any contact with the skins in order not to get any colour.
After fermenting in stainless steel tanks, this cava brut nature was blended and bottled to complete secondary fermentation.
Finally, the cava Rara Avis Larus Brut Nature Reserva was aged for a minimum of 24 months before the disgorging.
Structured and tasty, this organic cava from Penedès will be a great accompaniment for oily fish recipes, cured cheeses and white meat dishes.
