A rare Spanish white wine coming from DO Toro, a region known for its bold red wines, San Román Malvasía is one of the bottlings of the San Román collection from Bodegas Maurodos. This is the Toro project of Mariano García, one of Spain's most talented and experienced winemakers.
Made solely from Malvasía, the grapes are sourced from ungrafted vines, 60 years old on average, planted in sandy soils at 700 metres of altitude.
Hand-picked in late August, the grapes were fully destemmed, macerated for 12 hours with the skins and drawn-off by gravity. Then this white wine from Toro was fermented in 500-litre oak barrels with native yeasts.
After that, San Román Malvasía 2020 was aged on lees for 10 months. It was bottled in July 2021.

Nose | This varietal Malvasía is well-defined and characteristic. Minerality is the dominant note - think of flint and matchstick - with some lively notes of citrus, white flowers and fennel. Oak is not prominent, and the fruit remains in the background. |
Palate | The opposite of a white fruit bomb, this wine from Bodegas Maurodos is linear and crisp, with a spectacular acidity and an impressive mid-palate definition. Zesty and slightly bitter, conveying a real sense of place and with real potential to evolve nicely in the bottle. Long finish with a mineral and herbal aftertaste. |
