White Wine Shaya Habis 2021

The wine Shaya Habis is an old vines varietal Verdejo from Rueda made from very old vineyards, some of which are pre-phylloxeric and over 100 years of age.
The vines grow in an extremely harsh terroir located in the Segovian meseta, a plateau in the heart of peninsular Spain characterized by freezing cold winters and boiling summers.
The production of this Spanish white wine from Bodegas y Viñedos Shaya, a brand of Gil Family Estates, was guided by minimal intervention criteria, in order not to unmask the remarkable quality of the fruit.
After obtaining the free-run must, this vegan white wine was fermented in 500 and 600 litre new oak barrels. Then, the white wine Shaya Habis 2021 was aged for 8 months on lees to gently smoothen its delightfully deep, rugged character.
It is advisable to decant this Crianza white wine from Rueda at least 30 minutes before drinking.

Nose | This varietal old-vines Verdejo is quite complex, with notes of citrus, ripe pineapple, a panoply of aromatic herbs and some floral remembrances. In the background we perceive some dry earth undertones, smoky hints and a delicate touch of oak. |
Palate | Bold, structured and nonetheless remarkably fresh, this white wine from Bodegas y Viñedos Shaya has a nice structure with plenty of detail, suggesting white and yellow fruit, along with some dry mineral notes, hints of wood and some refreshing, bitter undertones. Excellent acidity and long finish reminiscent of citrus, toast and dry earth. |
Our personal opinion | The white wine Shaya Habis 2021 preserves and honours the heritage of some precious old Verdejo vines. |
