Produced solely from Palomino grapes by bodega Tío Pepe, a brand of bodega González Byass, Tío Pepe is the world's best known fino from Jerez. The name of this Spanish fortified wine is an homage to José Ángel de la Peña, the uncle of the winery's founder.
Produced only from the mosto yema -the "free-run" juice- this fino from Jerez was fortified to 15.5% alcohol after completing alcoholic fermentation.
After that, Tío Pepe was aged, first under the "flor veil", and then in American oak barrels with the soleras and criaderas system for a minimum of 4 years.
Serve chilled. Pair with tapas, dry fruit, olives or, best of all, a good Ibérico ham.
