Produced by Bodegas Valdaya, a boutique winery from Ribera del Duero, Valdaya Mirum is a top-notch, under-the-radar Spanish red wine made from some of the highest vineyards in the region, which sit at over 900 metres of altitude.
A varietal Tinta del País, or Tempranillo, each parcel of unirrigated bushvines was hand-harvested, meticulously selected and then individually vinified according to its specific characteristics and needs.
After being destemmed, the grapes were macerated for 2-3 days in concrete diposits. Then this red wine from Ribera del Duero was fermented with wild yeasts. During the process, which lasted 20 days, gentle pump-overs were performed on a daily basis.
After that, each of the batches was transferred into fine-grained oak barrels, in which they went through malolactic fermentation and were aged for 18 months.
After selecting the best samples, Valdaya Mirum 2020 was blended and bottled.
Decant this age-worthy Crianza red wine at least 40 minutes before drinking.

Nose | This varietal Tinta del País is gorgeously complex, with brooding aromas of smoke, dark chocolate, black pepper and blueberries, evolving into vanilla, liquorice, cinnamon, earth and flowers. |
Palate | Compact, full-bodied and flavourful, with quality black fruit, a smokey and earthy character and some spicy and mineral undertones. Distinctively fresh and balanced, this wine from Bodegas Valdaya ends with a balsamic and mineral note which persists for quite some time. |
Our personal opinion | The red wine Valdaya Mirum 2020 is one of the purest expressions of the Ribera del Duero terroir out there. Serious ageing potential. |
