Cava VallDolina Brut Gran Reserva 2019

First produced by the Masia Can Tutusaus winery to celebrate its 25th aniversary, the sparkling wine VallDolina Brut Gran Reserva is a Cava produced from certified organic vineyards located in the area of Massís del Garraf, a limestone mountain range overlooking the Mediterranean at a 30-minute drive from the city of Barcelona.
Made from a traditional blend of Macabeo, Xarel·lo, Parellada, plus a droplet of Chardonnay, alcoholic fermentation of this organic Cava took place at a controlled temperature of 16ºC. Then this Spanish sparkling wine was bottled and added sugar and yeasts to complete secondary fermentation, in this case at a temperature of 13ºC.
Aged for 48 months on its lees, disgorging was performed manually, that is, without freezing the upper bottleneck. Finally, the wine VallDolina Brut Gran Reserva 2019 was added a tiny amount of dosage liquor, the well-known "liqueur d'expedition", to harmonise it and round it off.
This elegant organic Cava from Penedès will add luster and flair to a whole meal.

Nose | This blend of Macabeo, Xarel·lo, Parellada and Chardonnay has a captivating, old-school nose of white fruit, herbs, custard and dry fruit. We also perceive hints of earth and smoke, along with notes of toasted almonds. |
Palate | This cava of Can Tutusaus has a vinous quality to it, with some tiny bubbles and a zesty acidity. Citrus, aromatic herbs and some hazelnut and almond remembrances, all the way to a long, creamy finish. |
Our personal opinion | Well-defined and very savoury, the wne VallDolina Brut Gran Reserva 2019 is an extremely versatile Cava. |
