Dehesa de los Canónigos
This historical estate is a château-style winery by the Duero river.
The name Dehesa de los Canónigos is a reference to the original owner of the estate, the council of canons of the Valladolid cathedral, which at the time was composed of 22 canons (canónigos in Spanish). In 1931, the winery was bought by the Cid family, and some years later Mr. Luis Sanz Busto gave the project its current form. Nowadays, the company is run by his son, Iván Sanz, general director and vineyard manager, and his daughter Belén Sanz, oenologist and technical director.
Produced only from estate-grown grapes, the wines of the Dehesa de los Canónigos winery are sourced from 60 hectares of vineyards oriented north-south, planted within a 500-hectare estate situated at 800 metres of altitude, on the margins of the Duero river, in an area with a Mediterranean-Continental climate which provides excellent conditions for growing quality grapes. It is worth mentioning that, after the phylloxera catastrophe, the Canónigos estate was one the first in Ribera del Duero to be replanted with European varieties grafted on American rootstock coming from Napa Valley.
The defining variety of the wines of bodega Dehesa de los Canónigos is Tempranillo, aka Tinto Fino, which is typically complemented with variable amounts of Merlot and Cabernet Sauvignon, two international varieties well adapted to the soils and climate of the region. There is also one white variety, the indigenous Albillo Mayor, used to produce a white wine. The winery prides itself on picking the grapes at the exact harvest time, a key feature for producing terroir-transparent wines.
Fine examples of the classic Ribera del Duero style, the wines of the Dehesa de los Canónigos winery are vinified in a traditional manner. Each plot of vines is individually fermented in stainless steel tanks under controlled temperature according to its specific needs and characteristics. Then the wines are aged in 1st and 2nd American oak barrels coming from different cooperages, a fact which adds nuance and complexity. The resulting wines are deep, elegant and age-worthy.
