Terroir-driven wines from Ribeira Sacra.
Founded in 1991, the Guímaro winery is located in Sober, in the Amandi subzone of Ribeira Sacra, a region in Galicia known for its impossibly steep, scenic vineyards perched on the banks of the Sil river. Headed by Pedro Manuel Rodríguez, the heir of a long line of local colleteiros (wine growers), the name of the winery comes from the nickname of Mr. Rodríguez’s grandfather: “guímaro” (meaning rebel in the Galician language).
In 1991, the winery refurbished and upgraded its facilities, which up to then had been mainly dedicated to producing bulk wine. In 1996, Bodega Guímaro was one of the first wineries to join the recently approved DO Ribeira Sacra. In 2001, Mr. Rodríguez took the reins of the company and, after a fateful encounter with world-class winemaker Raúl Pérez, decided to redefine the company’s goals.
From then on, the winery focused its activity on the production of terroir-driven wines capable of capturing and expressing the unique personality of the Ribeira Sacra region. Following Raúl Pérez’s advice, the winery changed its whole winemaking approach, fermenting the grapes spontaneously with native yeasts and using huge diposits and used wooden barrels so that the amazing terroir of Ribeira Sacra could speak without hindrances.
Bodega Guímaro currently owns 8 hectares of vineyards with different soil compositions; besides, the winery buys grapes to trustworthy local wine growers who share the winery’s commitment to environmentally conscious and minimal intervention agriculture. The Guímaro wines are made solely from local and traditional grapes. The red varieties are Mencía, Sousón, Caíño, Brancellao, Mouratón, Merenzao or Trousseau and Alicante Bouschet. The white varieties are Godello, Treixadura, Albariño,
Torrontés and Loureira, among others.
